Anthony Bourdain is host of the Discovery Channel's No Reservations, executive chef at Les Halles in Manhattan, and author of the bestselling and groundbreaking Kitchen Confidential, Anthony Bourdain's Les Halles Cookbook, A Cook's Tour, Bone in the Throat, and many others. His latest book, The Nasty Bits will be released on May 16, 2006.

Heat is a remarkable work on a number of fronts--and for a number of reasons. First, watching the author, an untrained, inexperienced and middle-aged desk jockey slowly transform into not just a useful line cook--but an extraordinarily knowledgable one is pure pleasure. That he chooses to do so primarily in the notoriously difficult, cramped kitchens of New York's three star Babbo provides further sado-masochistic fun. Buford not only accurately and hilariously describes the painfully acquired techniques of the professional cook (and his own humiations), but chronicles as well the mental changes--the "kitchen awareness" and peculiar world view necessary to the kitchen dweller. By end of book, he's even talking like a line cook.

Secondly, the book is a long overdue portrait of the real Mario Batali and of the real Marco Pierre White--two complicated and brilliant chefs whose coverage in the press--while appropriately fawning--has never described them in their fully debauched, delightful glory. Buford has--for the first time--managed to explain White's peculiar--almost freakish brilliance--while humanizing a man known for terrorizing cooks, customers (and Batali). As for Mario--he is finally revealed for the Falstaffian, larger than life, mercurial, frighteningly intelligent chef/enterpreneur he really is. No small accomplishment. Other cooks, chefs, butchers, artisans and restaurant lifers are described with similar insight.

Thirdly, Heat reveals a dead-on understanding--rare among non-chef writers--of the pleasures of "making" food; the real human cost, the real requirements and the real adrenelin-rush-inducing pleasures of cranking out hundreds of high quality meals. One is left with a truly unique appreciation of not only what is truly good about food--but as importantly, who cooks--and why. I can't think of another book which takes such an unsparing, uncompromising and ultimately thrilling look at the quest for culinary excellence. Bill Buford—author of the highly acclaimed best-selling Among the Thugs—had long thought of himself as a reasonably comfortable cook when in 2002 he finally decided to answer a question that had nagged him every time he prepared a meal: What kind of cook could he be if he worked in a professional kitchen? When the opportunity arose to train in the kitchen of Mario Batali’s three-star New York restaurant, Babbo, Buford grabbed it. Heat is the chronicle—sharp, funny, wonderfully exuberant—of his time spent as Batali’s “slave” and of his far-flung apprenticeships with culinary masters in Italy.

Bill Buford decided in his early forties to ditch his job as a successful New Yorker editor to enter the world of food. What started with a simple assignment to write a magazine story on Mario Batali, the reknowned Food Network chef, ended up taking him to Italy and becoming a cook. "Heat" details this journey, including the back stories of numerous chefs and foodies with whom Buford ending up working, such as Batali.

The book is entertaining for the most part; hearing about the difficulties of being a line cook in a three-star New York restaurant is certainly interesting. Buford started at the bottom by prepping, including spending hours dicing carrots only to have them thrown out because they were done incorrectly. The book certainly conveys the message that great food requires precision and working in these kinds of restaurants is brutal. Of course, we've seen this same idea before in numerous other "insider" books.

What sets "Heat" slightly apart is the path that Buford takes. When he first starts cooking, he's the "kitchen b*tch" in Batali's Babbo Italian restaurant, and you really don't think he'll make it for more than a few months. However, he becomes enthralled with food, in particular homemade authentic Italian food. He becomes convinced that he has to follow Batali's lead and spend time as an intern in Italy, first learning pasta and then working for a famous Tuscan butcher.

Buford meets some interesting characters along the way and tells some fun stories. However, I could never shake the feeling that Buford was just playing a role. Indeed, he tries to downplay the fact that he entered this world as a writer - we don't get the full explanation of why he started in Batali's kitchen (i.e., to write a story) until page 141. In addition, he's supposed to be an underling in Batali's kitchen, yet several times he's invited to meals with Batali and treated as something different than the lowest ranking cook in the kitchen. Perhaps this complaint is quibbling, but it broke the tone for me enough to dock the book a star. Foodies of all sorts will probably enjoy reading this book and may even learn a few things, but I still found it strangely unsatisfying.

My preferred reading is almost anything to do with cooks, chefs, restaurants and especially food history. How could I be so lucky as to have someone write the perfect book for me. Add a wicked sense of humor and a lot of bravery that's involved in being - older - a novice - and hold a day job - yikes! What a fun, informative and interesting read. Couldn't put it down.

Far more than just a history of "Molto Mario", Bill Buford takes us on an impassioned search for perfection in cooking and ingredients, and introduces us to some incredible real-life characters in the process.

I have to say, it is rare that a non-reference/instruction book actually teaches its readers skills, facts, and useful practices. Heat is both enjoyable and, I can honestly say, highly practical. As I read about Buford's highly entertaining apprenticeships, I also learned how to make specific kinds of pasta, prepare a really great pasta dough, how to prepare several meals, and many other fascinating classical Italian methods of food preparation. It doesn't hurt that, in profiling Batali and his mentors (notably Marco Pierre White), Buford finds highly unique individuals and careers from which to draw interesting anecdotes. The only downside (and even this isn't much of a bother) is Buford's lack of objectivity when it comes to Batali. Buford clearly is infatuated with Batali and his cooking, but we, as readers, learn little about the man's flaws or unfiltered reactions. I feel as if I came away with a wonderful understanding of Buford as a person, but still know little about Batali.

I can cook, but I don't. I do, however, watch the Food Network religiously and find it quite entertaining despite the fact that I wouldn't eat much of what I see cooked on the shows I watch. That said, I have become fascinated with the cooks and chefs I see each day and how/why they do what they do. I personally have never felt compelled to research the food I eat and how and why is it treated/cooked/served in the way that it is, so I am intrigued by those that are so passionate about that very thing.

As a Food Network devotee, the promise of a "back story" on Mario Batali is what convinced me to read this book. There is a good bit about Mario and his restaurants (particularly Babbo) in the book and those sections are revealing, humorous, and sometimes shocking (if I'd planned a trip to Babbo before reading this book, I'd probably cancel my reservations now). This book is SO much more than that, though, and my interest in the non-Mario parts of the book truly surprised me.

Buford tells of his nearly-compulsive need to learn the true roots of Italian cooking and writes intensely detailed descriptions of pasta-making (when did eggs become part of the recipe?, handmade vs. machine-made, etc.), butchering (pigs and cows), animal husbandry, the origin and geography of authentic Italian ingredients and the lives and backgrounds of his Italian mentors. Because of his work at Babbo and his relationship with Batali, he (Buford) did his best to replicate much of Batali's early training in Italy, visiting the same places and working with the same mentors when possible. If someone had described this part of the book to me, I'd have certainly said, "Boring!," but I was surprised at just how compelling the story was and how I was drawn into it so easily.

The writer is gifted and his passion about his subject matter is apparent throughout the book. The characters are intriguing and the anecdotes are entertaining, allowing the story to carry "non-foodies" through some of the more detailed sections (described above) that may seem tedious to them. "Foodies," I suspect, will love the book in its entirity...minute details and all.

PS: On a side note, watching "Molto Mario" and "Iron Chef America" on Food Network is a whole new experience for me after reading this book. Mario has always seemed a bit snobbish to me regarding Italian cooking, ingredients, flavors, etc., but this book helped me understand his passion for and knowledge of all things Italian...language, geography, culture, food, etc. If you are a fan of Mario's, I'd definitely recommend this book -- you'll see him in a whole new light once you've read it!

Unfortuntately, these series of DANTES test prep books from National Learning are all outdated and of marginal use in preparing for the exams.

I used this book to study for my Dantes. I previously purchased The Drug and Alcohol Abuse book and passed the test with flying colors. This book does not have in it what you need to pass the test. Do NOT count on this book. I failed the test by one point. This test only a had a few questions that were from this book. Do not buy this book.

It is near impossible to find actual study material for Dantes exams (from the fact sheets)- but at least these practice exams allow you to get a feel for what subject matter will most likely be on the test. I found the Here's to Your Health practice exams helpful & gave me the answers to a lot of questions I did not know, as well as suggesting what areas I may want to review. I passed the exam with flying colors.

I took this test August of 2006, and studied this book for a few hours. This book is basically a huge list of sample Q's and A's (hopefully their answers are correct!)
I went through about 2/3 of the book, and I was pretty worried because the questions weren't about "health", they were about getting your M.D.
For instance, "What Vitamin will help protect your children from rickets?" or "Cortisone is used to relieve the symptoms of..." or "A deficiency of niacin usually results in..."
LOTS of detailed questions about causes and symptoms of diseases, specific chemical processes, etc.
The test was MUCH easier than this book seemed to suggest.
I was only helped on the test by about 10 questions from this book - that's 10%...
Get a general health book instead for studying - Much more general...

Make sure you are getting the Study Guide not the Q&A. Fortunately I got the study guide, but some of my classmates got the Q&A which is useless.
I passed the test with the help of the Study Guide.

After getting a shock from studying the Civil War and Reconstruction guide, I bought both the study guide and the recommended reading (Drugs and Society) for this test, and passed with an A. Not an easy test, but made much better by reading the accompanying material.

I took the Dantes test today.
There were 106 questions and this book maybe came close to 5.
What a surprise I experienced.
It would have been nice if most of the book material had been close to what was in the test.
It was if someone put the book together just guessing what the questions might be...

Using this Q & A book and one of the reference books DANTES recommends, I scored a 69 on this test and acquired 3 more upper level credits. Passing score was 47. This score of 69 scaled out to an "A" with Regents College.

Out of about 300 questions, I only found about 5 errors, not too bad.

    "Abandon all hope, ye who enter here," is an apt phrase from this book. However, Ciardi's translation and footnotes make the social and theological context of the work spring to life and make it sensible to the modern reader. This diagrams, analogies, and history lessons are always interesting to read and give a deeper meaning to the text that would be missed entirely by the non-specialist. He seldom sacrifices rhyme, rhythm or meaning, and never all of them at once. Further, he insists on maintaining the parallelisms and structural cycles of the original, which makes for an excellent reading experience.

    The Divine Comedy was written in the 1300s by Dante. It has three parts: The Inferno, The Purgartory, and The Paradise. The Inferno is Hell where sinners are punished in various ways according to the degree of their sins. The Purgartory is a waiting place in which sinners must endure certain hardships in order to inherit the Paradise. The Paradise is Heaven, where a select few live in a perfect society. The Divine Comedy follows Dante in his journey to perfection, however, it has many politicial ideals inbedded. This particular translation is excellent. It has a wealth of knowledge in its footnotes.

    Always a classic, this version of Dante's epic tale SINGS with all the magic of the original text. I truly enjoyed it and I must say that the cover art is very well done... very eye catching.

    While I have a number of translations of Dante's "Divine Comedy," I wanted a newer one which would be easier to read in more or less modern English. This one suited my needs now.

    Ciardi is a poet rather than a Dante scholar, and his translation reflects that approach, but I found it very useful, especially with the extensive introductions and notes he provides. I would recommend this work to anyone who is new to Dante's contribution to Western literature.

    Great copy for anyone taking a class over Dante Alighieri, Ciardi provides great notes at the end of each canto, covering all of the important names and reasons for punishment, as well as interpretations of many scholars over the years who have put some thought into the three books contained. You'll never think of Hell quite the same XD Though Purgatory is a little boring, and Heaven a little aloof... ah well, we're human, the bad aspects of life seem to get more attention.

    I got a 55 on the exam. However, I received the book 3 days before the test. I crammed and got through it. However, there were lots of questions on the test not covered in the book. The book itself was just a bunch of tests, not tangible study material. In summary, it was a good investment.

    I used this book along with a library book on environmental science to score a 58 on the exam (enough to give me credit with an A!). In many cases, the example questions were much harder than the actual exam qestions. I spent quite a bit of time reviewing the practice questions in this book, and the glossary of environmental terms came in very handy when I would come across a question that I wasn't familiar with. This book can not be your only study resource if you know very little about the topic. However, when used in conjuction with a well-written book on environmental science and current issues, it helps you to find your weakest areas and improve upon them. It also helped me to get a feel for the layout of the exam and gave good basic information about all the DANTES exams offered, including contact information for the Chauncey Group, the organization that oversees the program.

    This book does what is is meant to do: give you a glimpse at the exam before you take it, make your weakest areas clear to you and tell you how to find out more. It is NOT like one of the CLEP guides, which includes a small "textbook" as the first half for those who know little or nothing about the subject.

    These books by Jack Rudman are the best of the limited resources available to those who wish to take DANTES exams.

    This book is hard to come by, but well worth all the searching if you are planning to take the DANTES principles of Public Speaking Exam for college credit. Jack Rudman's guides have been useful to me in taking (and passing) five different DANTES exams. For anyone who doesn't know, DANTES are like CLEP but originally started by the military. Official info can be found at getcollegecredit.com on the program.

    This guides is comprehensive. It provides copies of all the official preparation materials provided by the Chauncey Group (who administers the test), along with many practice tests taken from old exams, examples of figures of speech and other important parts of public speaking, articles and excerpts from books and magazine about public speaking, as well as a glossary of public speaking basics. If you find yourself getting stuck on any of the practice tests in certain areas, look in the glossary to help review that subject. For this exam you will have to give a speech on tape on a topic chosen by the Chauncey Group. You must pass both the written and oral sections to earn credit.

    I don't usually (how about never!!) write book reviews; however, this is one book I feel like deserves my input. Being a golf book junkie, I feel like I am qualified to put in my two cents. For what it may be worth, this book, in my opinion, is the absolute best book that has ever been written in regard to helping golfers achieve success. Yes, there are other books that can technically explain various positions, etc, but this book by Dante gives you practical and easily understood instructions on improving/understanding the golf swing. Simply put, this book is the ONLY book I could unequivocally give a 5-star rating.

    After enriching Amazon by purchasing just about every lame golf book manufactured I stumbled upon this gem. Mr. Dante explains in concise detail why traditional golf instruction/tips are faulty in that they rely on a fundamentally incorrect perception of what is going on in the swing. He further lays out the correct way of swinging a golf club that is shockingly clear, with appropriate and easy check points. Proof is in the pudding, after years of just flailing around with little or no improvement, (and hundreds of dollars spent for "golf" lessons.) I have made dramatic improvement to my golf game in a matter of months. Try it! Best $18.00 you will spend.

    I thought I had enough of golf instruction books, having read so many in my life. I've also purchased videos and online "ebooks" and finally I've found the book that explains how to use my hips in the golf swing. This has been the biggest puzzle for me - getting my hips involved in the swing without causing a slice. The other aspect of the golf swing explained by Joe Dante so much better than I've seen before is how to create lag. His unique wrist-cock and swing make the whole swing sequence make much more sense. This is the first book I've read that has made me really change my golf swing - for the better. The belt drill is the most useful drill I've ever tried. The first time out, my swing was more powerful and accurate - and I'm hitting my driver with a high draw!

    He spends a little too much time discussing what most golfers and instructors do wrong, but once he gets to his four moves, it becomes clear why he spent the time dispelling old myths. If you've read all the others already, do yourself a favor and read one more.

    A complete mechanical overhaul. That's what this book is about. Don't expect the "magic moves" to be simple adjustments that you can make over the course of a week. I've read this book three times, and practiced countless hours trying to emulate the proper swing. I can now say that it was all worth it, as my shots now have more power, and my wicked slice is all but forgotten.
    Joe Dante approaches the golf swing in a scientific manner, first by disposing of long-held myths, and then presenting the proper movements as proven by photographs of the pros. He doesn't gloss over anything, explaining each principle fully with photos and common sense reasoning. If you want to stop swinging like a "Sunday morning duffer" (as Joe calls it), then read this book!

    I have played golf for 45 years and my lowest handicap was 5.I have read and reread every single instructional book,including Hogan,Leadbetter,Ballard,Nicklaus,as well as The Golfing Machine
    and The Search For The Perfect Golf Swing.My library has more golf books than I have had bogeys.I have also been to McLeans School at Doral three times.All said,I consider all of the above a complete waste of my time. Dante's clear and precise and simple explanation of how the golf swing works from a physical as well as a theoretical point of view,including the explanation of the Coefficient of Angular Momentum,has given me
    a new life on the golf course.
    My ball striking is pure,my confidence is high,and my mind is no longer paralyzed by hundreds of worthless swing thoughts.
    I have zero interest in any more lessons from any pro,do not read golf magazines anymore,and scoff at the latest theories
    which are created just to sell more books.
    I cannot wait to get to the course just to hit balls and ingrain the four moves which,essentially,promotes a flat left wrist,a firm left side,a stable body over the ball,and most importantly,starting the downswing with your hips while completely leaving your arms and hands and shoulders behind.

    The ball flight is absolutely the best I have ever witnessed with the least amount of effort. I am hitting each club at least one club longer with a lot less effort.

    Finally,when a shot goes astray,you get instant feeedback as to the reason and you can fix it on the next shot.

    If I swear by this book,it is because it has brought new life to my golf game and I finally have the tools to get down to a scratch golfer within a very short period of time.
